You will oversee the preparation, presentation, and quality of all baklava products while maintaining the highest standards of culinary excellence and food safety. - Prepare and execute traditional Turkish baklava recipes with precision, ensuring consistency in flavor, texture, and presentation across all products
- Develop and customize baklava recipes and flavor profiles, incorporating seasonal ingredients and creating signature variations that reflect both tradition and innovation
- Manage phyllo dough preparation and handling, maintaining proper techniques to achieve optimal texture and quality in finished products
- Source and evaluate high-quality ingredients, including nuts, honey, spices, and specialty items, while adapting to local Southeast Asian suppliers and market availability
- Train and mentor kitchen staff on baklava preparation techniques, food safety protocols, and quality standards
- Organize and maintain the pastry station, ensuring efficient workflow, proper equipment maintenance, and adherence to food safety regulations
- Collaborate with front-of-house staff and management to understand customer preferences and gather feedback for continuous improvement
- Monitor inventory levels and manage food costs while minimizing waste through efficient production planning
- Maintain detailed records of recipes, production processes, and ingredient specifications to ensure consistency and traceability
