We invite you to join the world of luxury hospitality at Fairmont Southampton as our new Stewarding Supervisor. Reporting to the Assistant Chief Steward, the Stewarding Supervisor is responsible for supervising and coordinating the daily stewarding and set-up operations across Fairmont Southampton. This includes kitchens, restaurants, banqueting and event spaces, beach venues, and associated back-of-house areas. The role ensures the highest standards of cleanliness, hygiene, safety, and venue setup while leading and supporting the stewarding team in delivering seamless operational support to Culinary and Food & Beverage departments.
What you will be doing:
Supervision & Team Leadership
- Supervise, schedule, and coordinate stewarding and set-up colleagues during assigned shifts.
- Provide clear direction, on-the-job training, and coaching to ensure team members perform to required standards.
- Monitor team performance, productivity, and adherence to policies and procedures.
- Foster a positive, professional, and team-oriented working environment.
- Lead by example through hands-on training and coaching within the stewarding team, ensuring all training is properly documented and maintained.
Stewarding & Cleaning Operations
- Oversee and participate in cleaning and sanitizing kitchen areas, including dishwashing and pot-washing operations, sinks, floors, and equipment.
- Ensure proper operation and care of dishwashers, pot-washers, and cleaning equipment.
- Supervise washing, polishing, storage, and inventory control of dishes, silverware, glassware, and kitchen equipment.
- Ensure all work areas, utensils, and equipment are clean, organized, and well-maintained at all times.
- Oversee cleaning and maintenance of designated washroom areas supporting food and beverage operations.
- Clean and maintain designated washroom areas associated with food and beverage operations.
- Safely use, clean, and maintain food and equipment trolleys, carts, and delivery equipment to ensure hygienic, organized, and efficient movement of items across all food and beverage areas.
- Handle equipment and supplies carefully to minimize breakage, loss, and damage.
Set-Up & Event Support
- Supervise restaurant setup before, during, and after service to ensure presentation and operational standards are met.
- Coordinate banquet, catering, and special event setups according to event orders and specifications.
- Oversee beach function setups, ensuring safety, cleanliness, and proper equipment placement.
- Ensure timely breakdown, cleaning, storage, and inventory of equipment following events and service.
Waste Management & Inventory Control
- Supervise all waste management processes for food and beverage operations, including recycling, disposal, and dumpster area cleanliness.
- Ensure proper rotation of products and supplies to minimize waste and spoilage.
- Monitor stock levels and ensure timely replenishment of kitchen and F&B supplies.
Safety, Hygiene & Compliance
- Ensure proper handling, storage, and use of cleaning chemicals in accordance with safety data sheets and hotel standards.
- Enforce all health, safety, sanitation, and food hygiene regulations.
- Maintain a safe and sanitary work environment and address safety concerns immediately.
- Report maintenance issues, equipment malfunctions, or hazards to the Assistant Chief Steward.
Operational Coordination
- Work closely with Culinary, Banqueting, and Food & Beverage leadership to support daily operations and special events.
- Assist with scheduling, workload planning, and coverage during peak operational periods.
- Perform other reasonable duties as assigned to support stewarding and F&B operations.
