We are looking for a dynamic Director of Food & Beverage to lead our Food & Beverage Team. Reporting directly into the Director of Operations in this key role.
Your key duties/responsibilities will include (but not limited to):
- Manage the restaurant, bar, executive lounge, room service and mini bar, to ensure quality and efficient service and standards whilst delivering a memorable guest experience.
- Review and analyse the daily operational needs maintaining beverage, labour, product and expenses on budget.
- Develop, implement and maintain quality standards for all food and beverage outlets including the supervision and direction of the food and beverage team.
- Ensure cleaning and maintenance of outlets, work areas, tableware, utensils and other materials and equipment used by restaurant, bar, room service and conference areas.
- Work closely with Executive Chef to ensure Food and Beverage service is an exceptional guest experience.
- Ensure all reporting departments are briefed and prepared for the service of large groups or events, including front office, housekeeping and engineering.
- Attend and actively participate in weekly Head of Department meetings respecting the confidentiality of issues discussed formally or informally.
- Adherence to Emergency Communication procedures ensuring that enquiries from the media are only responded to by the nominated spokesperson.
- Assist in the preparation of monthly reports, commenting on key performance indicators and action taken to keep on target.
- Recruit, manage, train, develop and inspire the Food and Beverage team.
- Keep up to date with Food Safety Programs. Maintain currency of Responsible Service of Alcohol (RSA) certification, amendments and updates and adhere to RSA principles.
