We are seeking an experienced Executive Pastry Chef to lead our pastry team and manage our busy operations. In this role, you will design and execute our pastry program while overseeing day-to-day business, including production, quality control, staffing, and the VIP amenity program. This is a hands-on leadership position, ideal for a culinary professional eager to shape a brand from the ground up.
Pastry and Culinary leadership
Designing signature and seasonal menus, including viennoiserie, entremets, plated desserts, savoury bakes, and chocolate and sugar showpieces
Overseeing all pastry production, ensuring flawless taste, texture, and presentation
Developing and documenting recipes, standard operating procedures, and quality-control systems
Maintaining best-in-class food-safety and cleanliness standards
Sourcing premium local and seasonal ingredients while cultivating strong supplier relationships
Leading staff training and skills development
Managing scheduling, ordering inventory, and fostering a positive, collaborative kitchen culture
Managing food cost, labour cost, and P&L targets; driving efficiencies without compromising quality
Collaborating with ownership on marketing initiatives, events, and seasonal merchandising
Handling guest relations, resolving issues promptly, and ensuring a memorable guest experience
