Your Role in the Story
As a Commis Chef at LUURA, you are a vital member of the kitchen team, supporting the Chef de Partie and Demi Chef de Partie in delivering high-quality, beautifully presented dishes. You play a key role in the smooth operation of the kitchen鈥攚hether at Mimi Kakushi or Lenea All Day Dining鈥攂y assisting with food preparation, maintaining strict hygiene standards, and ensuring consistency and excellence in every plate. Your dedication and attention to detail help create memorable dining experiences for our guests while upholding LUURA鈥檚 signature standards of quality and service.
Key Responsibilities
- Support the Chef de Partie or Demi Chef de Partie in daily kitchen operations.
- Follow menu specifications and preparation methods provided by the Chef de Partie.
- Maintain a clean and hygienic workstation at all times, adhering to LUURA food safety and sanitation standards.
- Prepare daily mis-en-place and assist in food production across different kitchen sections.
- Measure, mix, and prepare ingredients, sauces, and seasonings accurately.
- Wash, peel, chop, and cut fruits, vegetables, and meats as required.
- Prepare basic salads, sauces, and side dishes under supervision.
- Plate and present dishes according to the Chef de Partie鈥檚 instructions.
- Receive and verify deliveries, ensuring all items meet quality standards.
- Monitor inventory and notify Superiors when supplies are low or depleted.
- Dispose of spoiled or expired food items in line with LUURA and RIKAS sanitation policies.
- Coordinate with other kitchen sections on cleanliness, waste reduction, and cost control.
- Assist with basic cleaning duties, ensuring all workstations and equipment are sanitized.
- Follow instructions and recommendations from immediate Superiors to complete daily tasks.
- Contribute to the ongoing development of culinary knowledge and skills to support high-quality meal production.
- Report any issues with kitchen equipment or supplies to immediate Superiors promptly.
