Job Duties Include:
Reporting to the Executive Chef responsibilities and essential job functions include but are not limited to the following:
- Lead, mentor, and develop the butchery team by fostering a culture of excellence, conducting performance reviews, and providing ongoing coaching and training.
- Oversee all butchery operations, including the precise breakdown of meats and seafood, ensuring quality, consistency, yield optimization, and adherence to brand standards.
- Maintain strict food safety, cleanliness, and organization standards across all workspaces, ensuring compliance with hygiene regulations and internal audit requirements.
- Manage production, inventory, and cost control, including ordering, product traceability, yield management, and alignment with budget targets.
- Collaborate with Culinary Leadership and Purchasing to support menu development, forecast needs, and drive sustainable and efficient product utilization.
- Ensure operational excellence through effective scheduling, payroll management, equipment maintenance, and strong communication with front-of-house and supporting departments to enhance the guest experience.
