Perform routine analysis on both juice and wine samples using wet chemistry methods as well as an autoanalyzer. Analyis will include, but not limited to: TA, pH, Brix, Malic Acid, YAN, Acetic Acid
Monitor and log fermentations daily and maintain records in an accurate and time-efficient manner
Alert winemaking team of any struggling fermentations
Assist vineyard intern with fruit analysis as needed
Assist production team in cellar as needed with fruit processing, cap management (punch downs and pump overs), transfers, ingredient additions and inoculation, draining and pressing, and other production duties throughout harvest
