A handmade fresh pasta maker shares knowledge about products and ingredients with guests and recommends products and portion sizes. Reports to Central Kitchen Chef De Cuisine and Fresh Pasta Lead.
- Ensures retail supplies are in stock and being utilized properly at all stations
- Stocks counter and display refrigerators neatly, accurately and in a timely manner
- Slices, weighs, labels, displays, sells and packages products per department standards and advises guests on pasta choices
- Handcraft a variety of fresh pasta shapes using traditional techniques and tools.
- Operate and maintain pasta-making equipment, including rollers and cutters.
- Ensure consistent texture, thickness, and quality of all pasta products.
- Monitor dough hydration and elasticity, making adjustments as needed.
- Ensures all items are rotated according to First In First Out (FIFO) standards
- Maintains a clean and sanitary work area that meets Department of Health standards
- Performs other duties as required or assigned
