The Food & Beverage Supervisor (Captain) reports to the Maître’ d or Assistant Maitre’ d and is responsible for overseeing restaurant operations, guiding the team, and ensuring a seamless, luxury dining experience for guests. This role supports service delivery, coordinates operational tasks, and upholds Fairmont brand standards.
What you will be doing:
Operational Excellence & Service Delivery
- Supervise assigned sections and support the team to deliver consistent, high-quality service.
- Coordinate opening and closing procedures, ensuring all setups meet departmental standards.
- Greet guests, present menus, explain specials, and respond to inquiries about food and beverages.
- Take and relay accurate food and beverage orders via POS, ensuring timely delivery.
- Monitor guest satisfaction, address concerns promptly, and escalate issues when necessary.
- Maintain clean, safe, organized, and well-stocked service stations.
- Ensure tables are properly set, cleared, and reset throughout the shift.
- Promote menu items, beverage specials, and other offerings to enhance guest experience and revenue.
- Demonstrate awareness of guest allergies, dietary restrictions, and special requests, ensuring clear communication with kitchen and service teams.
- Apply service recovery standards to resolve guest concerns professionally and efficiently utilizing Fairmont's ‘Own it’ training.
- Ensure accuracy in billing, payment handling, voids, and corrections in line with company procedures.
Team Support & Leadership
- Guide, support, and mentor colleagues to ensure confidence and accuracy in service delivery.
- Participate in pre-shift briefings and team communications to align priorities.
- Assist in the absence of management to oversee the outlet and maintain operational flow.
- Provide on-the-floor coaching, guidance, and real-time feedback to team members during service.
- Uphold Fairmont grooming, conduct, and service values across the team.
- Support conflict resolution among colleagues in a calm and professional manner.
Inventory, Scheduling & Coordination
- Support inventory control, collect requisitions, and ensure stock levels match requirements.
- Assist with team rostering and shift coverage to maintain optimal operations
- Collaborate with kitchen, bar, and other departments to ensure seamless service.
- Communicate menu changes and 86’d items clearly to the service team.
- Monitor par levels and demonstrate cost awareness by minimizing waste and breakage.
Guest Experience & Brand Standards
- Uphold Fairmont luxury standards in all interactions.
- Monitor guest feedback, respond to concerns, and promote loyalty program benefits where appropriate.
- Maintain discretion and confidentiality in all guest interactions.
- Recognize and provide personalized service to VIP, repeat, and special-occasion guests.
- Monitor ambience standards including cleanliness, presentation, lighting, and music levels.
Other Responsibilities
- Follow outlet policies, procedures, and service standards.
- Perform additional tasks as required to support restaurant operations.
- Comply with all health, safety, and food hygiene standards at all times.
- Report maintenance issues, safety concerns, or incidents promptly to management.
