Reporting to the Beverage Manager, the Mixologist is responsible for curating exceptional cocktail experiences while demonstrating advanced wine knowledge and service expertise. This role blends creativity, technical mastery, and refined hospitality to enhance guest engagement, elevate beverage programs, and support overall Food & Beverage excellence. The Mixologist sets the standard for craftsmanship, presentation, and storytelling confidently guiding guests through curated cocktail selections and thoughtfully chosen wines that complement Fairmont鈥檚 culinary offerings.
What you will be doing
Luxury Beverage Experience & Guest Engagement
- Craft, present, and serve high-quality cocktails, mocktails, wines, spirits, and specialty beverages in accordance with Fairmont brand standards and LQA guidelines.
- Deliver elevated, personalized guest experiences through confident storytelling, beverage education, and refined service techniques.
- Demonstrate advanced wine knowledge, including grape varieties, regions, vintages, tasting profiles, storage, and food pairings.
- Act as a wine and cocktail ambassador, guiding guests through selections and recommending premium offerings to enhance the dining experience.
- Ensure responsible alcohol service at all times, exercising sound judgment in line with local regulations and hotel policy.
- Anticipate guest preferences, monitor allergies and dietary restrictions, and provide attentive, detail-oriented service.
- Handle guest feedback with professionalism, discretion, and a solutions-driven mindset.
Cocktail Innovation & Wine Program Support
- Lead the execution of classic and contemporary cocktails with precision, consistency, and creativity.
- Contribute to the development, testing, and implementation of seasonal and signature cocktail menus.
- Support wine program execution, including by-the-glass offerings, bottle presentations, and proper wine service rituals.
- Stay current on global cocktail, wine, and spirits trends, integrating best practices into daily operations.
- Ensure consistency in recipes, presentation, glassware, and portion control.
Bar Operations & Quality Standards
- Maintain impeccable bar setup, cleanliness, organization, and breakdown across all service periods.
- Uphold all health, safety, sanitation, HACCP, and licensing standards.
- Operate POS systems accurately, ensuring correct billing and cash handling procedures.
- Support inventory awareness, product rotation, waste control, and cost-conscious beverage execution.
- Handle bar tools, glassware, and equipment with care to minimize breakage and loss.
Teamwork & Collaboration
- Serve as a role model for bartenders and bar support staff through professionalism, technique, and guest engagement.
- Support training and mentoring of the bar team, with a focus on cocktail execution, wine knowledge, and service standards.
- Collaborate closely with restaurant leadership, culinary teams, and beverage management to ensure seamless service delivery.
- Maintain composure and leadership presence in high-volume, fast-paced luxury environments.
- Remain flexible to support multiple Food & Beverage outlets as operational needs require.
