What you will be doing:
Review the daily BEO with the CDP or Sous Chef and prepare the necessary food items in accordance with Fairmont standards in a timely and efficient manner
Ensure that all food products are handled, stored, prepared and served safely in accordance with hotel and Food Safety guidelines. Ensure that all ECOSURE standards and processes are completed on a daily basis, this includes but isnβt limited to filling out daily temperature logs, labelling and dating of items as well ensuring food storage areas are cleaned daily.
Create and design bespoke amenities, showpieces, and specialty desserts that align with the hotelβs brand and guest expectations.
Produce and decorate specialty cakes, petit fours, and plated desserts with precision and artistic flair.
Execute advanced chocolate work, including molding, sculpting, and tempering.
Apply sugar work techniques for artistic decorations (pulled, blown, or cast sugar); experience is considered an asset.
Collaborate with the Pastry team to develop innovative concepts for events, VIP amenities, and seasonal displays.
Ensure consistent quality, portion control, and presentation standards are maintained at all times.
Work independently and efficiently to manage multiple tasks and deadlines.
Maintain cleanliness, organization, and compliance with food safety and sanitation standards.
Support overall kitchen operations as needed, including mise en place and inventory control.
