Key Responsibilities
Team Leadership & Supervision
- Lead, coach, mentor, and motivate a large stewarding team
- Ensure all stewarding staff arrive on time, properly groomed, and ready for their shifts
- Assist in roster planning / scheduling for stewarding teams to match demand (peak service times, banquet events)
- Assign workstations and tasks during line-up / briefings (start of shift) and pass on necessary information about events / banquet orders
- Provide training to kitchen stewards in all duties, including chemical usage, sanitation standards, equipment operation, etc.
Operational / Back-of-House Management
- Supervise the cleaning, organization, and sanitation of kitchens, storage rooms, dishwashing areas, back鈥恛f鈥恏ouse hallways, loading docks, and equipment
- Oversee opening and closing tasks / checklists for stewarding shifts
- Coordinate with culinary, banquet, and restaurant teams to ensure that stewarding support is aligned with service needs and event setups
- Conduct regular inspections / walkthroughs with the Chief Steward / to ensure compliance with cleanliness, equipment condition, storage, and sanitation standards
- Manage inventory: chemicals, cleaning supplies, replacement equipment, etc.
- Monitor breakage of items (china, glass, silverware) and remove chipped or damaged items from circulation
- Ensure all equipment is working properly; report or coordinate maintenance / repair as needed
- Maintain accurate records (logbooks, shift reports, inventory, breakage)
Health, Safety & Compliance
- Enforce hygiene, sanitation, and food-safety protocols, including local health regulations (e.g., HACCP) and the hotel standards
- Ensure proper handling, storage, and use of cleaning chemicals
- Maintain a safe working environment; enforce safety rules, proper use of PPE, correct chemical dilution, etc.
- Ensure compliance with environmental / waste management policies (garbage removal, recycling) as per hotel standards
Staffing & Scheduling
- Fill stewarding positions as needed (e.g., assign extra staff during high-volume or events)
- Provide shift handovers / pass-offs (using logbooks or written reports) to next shift supervisor
