Position Overview
Our Chef de Partie – Night is a key member of the Kitchen Brigade, dedicated to ensuring excellence, consistency, and operational continuity during overnight hours in line with the standards of a 5-star luxury hotel.
This role supports the Head Chef and Sous Chef in overseeing night kitchen operations, ensuring the highest quality of food preparation for late-night room service, overnight outlets, and breakfast mise en place. The Chef de Partie – Night combines technical expertise, precision, and strong organizational skills to maintain the hotel’s culinary reputation while operating with autonomy and efficiency.
The position requires reliability, discipline, and a strong commitment to hygiene, safety, and luxury culinary standards at all times.
Key Responsibilities
• Manage and oversee the assigned kitchen section during night shifts, ensuring smooth and efficient operations.
• Prepare and cook dishes for overnight room service and any late-night dining outlets according to hotel standards and recipes.
• Ensure consistency, presentation, and quality of all food items produced during the shift.
• Monitor food storage, labeling, and stock rotation in compliance with HACCP procedures.
• Maintain impeccable cleanliness and organization of workstations, cold rooms, and storage areas at all times.
• Supervise and support the night kitchen operations and requests.
• Collaborate with Front Office and Room Service teams to ensure timely delivery of orders and seamless guest service.
• Monitor stock levels and report shortages or maintenance issues promptly to the Sous Chef or Head Chef.
• Minimize waste and ensure proper handling and storage of all food products.
• Ensure full compliance with hotel safety, hygiene, and local health regulations.
• Uphold the highest standards of grooming, uniform presentation, and professional conduct.
• Participate in training sessions and continuously develop culinary techniques and product knowledge.
