**Production & Quality Assurance**
- Oversee the production of all pastries, cakes, cold and hot desserts, and baked goods for the pastry shop and other outlets
- Prepare and monitor daily and weekly production charts to ensure timely delivery and consistency
- Maintain rigorous quality control standards and ensure all products meet organizational specifications
- Ensure strict compliance with HACCP procedures and maintain comprehensive records at all times
- Detect and appropriately dispose of blemished food and defective supplies or equipment
**Menu Planning & Innovation**
- Plan and design innovative menus featuring pastries, bakery items, and chocolates with tasteful presentation
- Create competitive edge through culinary innovation while maintaining consistency in quality
- Develop and refine recipes that cater to both international clientele and local market preferences
- Establish and maintain standards that meet international culinary expectations
- Provide wine and food pairing recommendations when applicable
**Team Leadership & Development**
- Supervise and mentor senior bakers and support staff to ensure smooth departmental operations
- Motivate your team to deliver excellent service and foster a collaborative work environment
- Develop and implement effective training programs, including safety and food handling protocols
- Maintain appropriate staffing levels through strategic duty roster planning
- Respond promptly to team concerns and provide supportive guidance for professional growth
**Financial & Operational Management**
- Analyze food costs and determine cost-effective recipes without compromising quality
- Monitor departmental operations to minimize food wastage and optimize resource utilization
- Maintain the department budget within established guidelines
- Manage inventory records and coordinate stock orders from the main storeroom
- Direct maintenance and care of departmental facilities, equipment, and supplies
**Documentation & Continuous Improvement**
- Record all recipes and maintain comprehensive documentation for reference and consistency
- Maintain detailed records and reports of food production and departmental activities
- Evaluate systems and procedures to identify opportunities for continuous improvement
- Coordinate operations with department coordinators and other managers to ensure efficiency
- Escalate any matters affecting organizational interests to management attention
- Perform additional responsibilities as assigned by management
