In this role, you will provide strategic and hands-on leadership across our restaurant, bar, cafe, room service and conferencing operations, ensuring exceptional service standards, strong financial performance, and a motivated, high-performing team.
- Lead and manage all Food & Beverage operations, ensuring consistent delivery of exceptional guest experiences.
- Review and analyse the daily operational needs maintaining beverage, labour, product and expenses on budget.
- Develop, implement and maintain quality standards for all food and beverage outlets including the supervision and direction of the food and beverage team.
- Contribute to the development of the Annual Business Plan and Financial Budget, actively managing costs and performance throughout the year.
- Prepare and review weekly and monthly forecasts across all food and beverage outlets.
- Analyse daily operational performance, controlling labour, beverage, product, and expenses in line with budgeted targets.
- Assist in the preparation of monthly performance reports, identifying key trends, risks, and improvement opportunities.
- Recruit, train, mentor, and inspire a high-performing Food & Beverage team.
- Ensure full compliance with food safety standards, liquor licensing requirements, RSA guidelines, and hotel policies.
- Maintain a strong presence on the floor, leading by example and fostering a positive team culture.
