About the Role
We’re looking for a bold, creative, and commercially minded Director of Food & Beverage to join our team for the high season, May through September. As a key member of the hotel leadership team, you will oversee all culinary and beverage experiences, ensuring each guest moment reflects the hotel’s luxury lifestyle ethos.
This seasonal role offers an exciting opportunity to make a tangible impact during a high-energy period, with potential for longer-term opportunities within Ennismore’s portfolio beyond the season.
What you’ll do...
Pre-Opening & Seasonal Launch
Collaborate with brand, design, and culinary teams to develop innovative F&B concepts that fuse local inspiration with global lifestyle trends.
Recruit, onboard, and inspire your F&B team, ensuring operational and cultural alignment.
Oversee setup of kitchens, bars, restaurants, and event spaces, including OS&E, licensing, and menu development.
Partner with Marketing & PR teams to create buzz and elevate the guest experience from day one.
Operations & Guest Experience
Lead daily F&B operations across restaurants, bars, IRD, banquets, and events.
Deliver consistent, high-quality guest experiences while driving commercial performance.
Monitor costs, margins, and KPIs, ensuring profitability without compromising creativity.
Maintain hygiene, safety, and brand standards at all times.
Team Leadership
Inspire a high-performing seasonal team, fostering collaboration, creativity, and accountability.
Implement development opportunities for team members, with a focus on cultivating future leaders.
Uphold Ennismore’s values in grooming, conduct, and communication across the department.
Brand & Strategy
Position the hotel as a standout F&B destination in the North Coast.
Innovate menus, service rituals, and guest experiences that reflect local culture with a global lifestyle perspective.
Work with Brand and Marketing teams to deliver compelling storytelling across all F&B touchpoints.
Facilities & Support
Ensure all kitchens, bars, dining areas, and back-of-house spaces are operational, safe, and efficient.
Collaborate with Engineering and People & Culture for seamless day-to-day operations.
