As Executive Chef / Senior Chef De Cuisine, you will be the beating heart of Mama Shelter Singapore’s culinary experience. You’ll shape the menus, inspire the brigade, champion food quality, and create a dining experience that is playful, generous, and full of soul — just like Mama.
This role blends creativity with operational excellence. You’ll lead all kitchen operations across our restaurant, rooftop, bars, in-room dining, and events, ensuring that every plate that leaves the kitchen carries Mama’s signature flair.
What You’ll Do
- Develop innovative, seasonal menus that reflect Mama Shelter’s identity and the vibrancy of Singapore.
- Lead, train, and inspire a diverse kitchen team with positive energy and strong culinary leadership.
- Ensure flawless food quality, consistency, and presentation across all outlets.
- Oversee purchasing, inventory, food cost, and budgeting — keeping efficiency high without compromising creativity.
- Maintain impeccable hygiene and safety standards in line with Singapore regulations.
- Collaborate closely with the General Manager, F&B Manager, and the global Mama brand culinary team.
- Bring a spirit of fun, inclusiveness, and hospitality to the kitchen every single day.
