The Pastry Sous Chef reports to the Executive Pastry Chef and plays a key leadership role within the Pastry Department, supporting the execution of pastry and dessert operations across Fairmont Southampton's restaurants, lounges, banquets, in-room dining, specialty outlets, and special events. This hands-on culinary leader assists in overseeing daily production, colleague development, operational excellence, quality assurance, and cost control while ensuring all pastry offerings reflect Fairmont and Accor luxury standards. The Pastry Sous Chef inspires creativity, fosters teamwork, and contributes to the delivery of exceptional guest experiences through outstanding pastry execution.
Key Responsibilities
Pastry Operations & Quality Assurance
- Assist the Executive Pastry Chef in managing the daily operations of the Pastry Department.
- Oversee pastry production and service during assigned shifts, ensuring consistency, quality, and timely execution.
- Support pastry operations across restaurants, banquets, specialty events, in-room dining, and resort activations.
- Ensure the highest standards of product quality, flavor, presentation, and portion consistency.
- Maintain full knowledge of all pastry menus, seasonal offerings, promotions, amenities, and special event requirements.
- Ensure allergen awareness, dietary accommodations, and special guest requests are properly communicated and executed.
- Uphold Fairmont brand standards, LQA standards, and guest experience expectations.
Menu Development & Culinary Innovation
- Support the development, testing, and implementation of new dessert, bakery, chocolate, confectionery, and specialty pastry offerings.
- Contribute creative ideas that enhance the resort's luxury positioning and culinary reputation.
- Assist with recipe development, plating standards, and product specifications.
- Monitor industry trends and guest preferences to identify opportunities for innovation.
- Ensure recipe consistency through proper documentation and adherence to established standards.
- Support the creation of custom cakes, VIP amenities, holiday offerings, and specialty event displays.
Team Leadership, Training & Development
- Train, mentor, and supervise Pastry Cooks, Bakers, Commis Chefs, and other pastry team members.
- Support recruitment, onboarding, scheduling, and colleague development activities.
- Foster a positive, collaborative, and inclusive work environment.
- Provide real-time coaching and feedback to maintain high standards of performance.
- Assist in identifying and developing high-potential culinary talent.
- Support performance management processes and address performance concerns in accordance with company policies.
- Lead by example through professionalism, culinary expertise, and commitment to excellence.
Financial Management & Inventory Control
- Assist in monitoring food costs, labor productivity, and departmental expenses.
- Support inventory management, ordering, receiving, and storage of pastry ingredients and supplies.
- Ensure proper product rotation, labeling, and storage procedures.
- Monitor waste, yields, and portion control to maintain profitability targets.
- Collaborate with Purchasing to source quality ingredients while maintaining budget objectives.
- Support annual budgeting, forecasting, and cost-control initiatives as required.
Foody Safety, Compliance & Maintenance
- Ensure full compliance with HACCP, food safety regulations, sanitation standards, and company policies.
- Maintain cleanliness, organization, and proper sanitation throughout all pastry production areas.
- Complete temperature logs, cleaning schedules, production records, and compliance documentation accurately.
- Ensure all pastry equipment is maintained in excellent working order and report maintenance concerns promptly.
- Promote safe work practices and proper equipment use throughout the department.
- Support internal audits and food safety inspections as required.
Sustainability & Responsible Sourcing
- Support Fairmont and Accor sustainability initiatives related to responsible sourcing and waste reduction.
- Participate in food waste monitoring and reduction programs.
- Promote environmentally responsible practices within pastry operations.
- Support local sourcing initiatives where appropriate.
- Assist in identifying opportunities to improve efficiency while minimizing environmental impact
Guest Experience & Cross-Department Collaboration
- Collaborate closely with Culinary, Stewarding, Banquets, Restaurants, Events, and Food & Beverage leadership teams.
- Participate in special events, culinary activations, media opportunities, and VIP functions as required.
- Engage with guests and clients to support customized pastry experiences and event requirements.
- Respond promptly and professionally to guest feedback and service concerns.
- Support resort-wide culinary initiatives and special projects.
- Flexibly assist other culinary operations as business needs require.
