The Culinary Apprentice is an entry-level member of the culinary team who participates in structured on-the-job training while supporting food preparation and service within Fairmont Southampton's luxury culinary operation. Working under the guidance of the Sous Chef, Chef de Partie, and other culinary leaders, the Culinary Apprentice will develop foundational culinary knowledge, practical cooking skills, and an understanding of professional kitchen operations. This position provides an opportunity to learn and gain experience across various kitchen stations and outlets while contributing to the preparation of high-quality food and exceptional guest experiences. The Culinary Apprentice is expected to demonstrate enthusiasm, reliability, a willingness to learn, and commitment to Fairmont's standards of excellence.
Key Responsibilities
Food Preparation & Culinary Learning
- Assist the Sous Chef, Chef de Partie, and culinary team with food preparation activities, including washing, peeling, cutting, chopping, and measuring ingredients.
- Assist in preparing, cooking, and plating dishes according to menu specifications and recipe standards under the guidance of senior chefs.
- Learn and apply fundamental culinary techniques, including knife skills, cooking methods, food presentation, and portion control.
- Prepare and organize ingredients, tools, and workstations before service to support efficient kitchen operations.
- Assist with the setup and breakdown of buffets, food displays, and kitchen stations as required.
- Follow standardized recipes, preparation procedures, and plating guidelines.
- Develop an understanding of dietary requirements, allergens, and special menu requests under supervision.
- Participate in rotational assignments across kitchen stations and outlets to gain a broad culinary foundation.
Learning & Development
- Participate in structured on-the-job training designed to develop culinary skills and professional knowledge.
- Receive coaching, mentoring, and feedback from culinary leaders to support continuous improvement.
- Demonstrate a willingness to learn new techniques, procedures, and industry best practices.
- Work toward achieving individual learning and development goals as established by the culinary leadership team.
- Attend training sessions and complete required food safety and compliance programs.
Kitchen Operations & Food Safety
- Maintain cleanliness, organization, and sanitation of workstations, equipment, storage areas, and kitchen facilities.
- Follow all food safety, hygiene, and sanitation procedures in accordance with hotel policies and regulatory requirements.
- Assist with proper receiving, storage, labeling, dating, and rotation of food products.
- Support waste reduction initiatives through proper food handling and storage practices.
- Report equipment malfunctions, maintenance issues, and safety concerns to supervisory team members.
Teamwork & Service Excellence
- Work collaboratively with chefs and colleagues to support efficient kitchen operations and timely food service.
- Assist with receiving deliveries, organizing inventory, and replenishing supplies as directed.
- Support culinary operations during high-volume periods, special events, and banquets.
- Demonstrate professionalism, respect, and a positive attitude when interacting with colleagues and guests.
- Accept feedback constructively and apply learning to improve performance and skills.
- Assist in maintaining Fairmont's standards for quality, presentation, and guest satisfaction.
Additional Duties
- Perform other reasonable duties as assigned by the Sous Chef, Chef de Partie, or Executive Chef.
- Support operations across multiple kitchen outlets within the resort as business needs require.
