We invite you to join the world of luxury hospitality at Fairmont Southampton as our new Assistant Chief Steward. The Assistant Chief Steward reports to the Executive Chief Steward and is responsible for supporting the daily operation of the Stewarding Department across Fairmont Southampton. This role assists in ensuring the highest standards of cleanliness, sanitation, organization, and operational readiness throughout all kitchens, restaurants, banqueting facilities, beach venues, and back-of-house food and beverage areas. The Assistant Chief Steward supports the management of stewarding colleagues, inventory, equipment maintenance, hygiene compliance, and event setup activities, while helping maintain luxury service standards and operational efficiency throughout the resort.
Key Responsibilities
Stewarding Operations & Hygiene Management
- Assist in overseeing the daily operation of the stewarding department, ensuring all dishware, glassware, silverware, cookware, and kitchen equipment are cleaned, sanitized, and stored in accordance with established standards.
- Support the maintenance of the highest hygiene and sanitation standards in compliance with local regulations, HACCP requirements, and Accor/Fairmont standards.
- Monitor stewarding work areas to ensure cleanliness, organization, and operational efficiency.
- Conduct regular inspections of kitchens, stewarding areas, storage locations, and food preparation support areas.
- Assist in maintaining proper chemical handling, storage, labeling, and usage procedures.
- Support the Executive Chief Steward in achieving departmental cleanliness and sanitation objectives.
Setup & Event Support
- Assist in coordinating the setup and breakdown of banquet functions, outdoor events, beach venues, restaurants, and special events.
- Ensure all event support equipment, furniture, and service ware are available, properly maintained, and set according to established standards.
- Work closely with Culinary, Banquets, and Food & Beverage teams to support operational requirements.
- Monitor quality and presentation standards for all event setups.
- Assist with inventory and logistics planning for major events and conferences.
- Ensure timely execution of event support activities while maintaining luxury service standards
Inventory, Equipment & Asset Management
- Assist with the control and inventory of stewarding supplies, chemicals, operating equipment, and cleaning materials.
- Monitor stock levels and submit requisitions as required to support operations.
- Help maintain accurate inventory records and equipment tracking systems.
- Conduct regular inspections of dishwashing equipment, kitchen support equipment, and stewarding facilities.
- Coordinate maintenance requests and follow-up with Engineering regarding equipment repairs.
- Assist in implementing cost-control initiatives and minimizing breakage and loss.
Team Leadership & Development
- Supervise stewarding colleagues during assigned shifts and ensure work is completed to established standards.
- Provide guidance, coaching, and on-the-job training to stewarding team members.
- Assist with colleague scheduling, attendance monitoring, and daily task assignments.
- Support departmental onboarding and training activities.
- Promote teamwork, engagement, accountability, and operational excellence.
- Act as a role model by maintaining a hands-on presence and supporting team members during peak operational periods.
Safety Hygiene & Compliance
- Ensure compliance with all food safety, sanitation, workplace safety, and hygiene standards.
- Conduct routine inspections and audits of stewarding operations and facilities.
- Assist in maintaining HACCP documentation, records, and corrective action plans.
- Ensure all chemicals are safely stored and handled in accordance with Safety Data Sheets (SDS).
- Participate in accident investigations, incident reporting, and corrective action implementation.
- Support emergency procedures, fire safety programs, and departmental safety initiatives.
- Proactively identify and report safety concerns, maintenance issues, and operational risks.
Cross-Department Collaboration
- Work closely with Culinary, Restaurants, Banquets, Beach Clubs, and other Food & Beverage operations to ensure seamless support services.
- Assist with planning operational requirements for large-scale events, functions, and conferences.
- Collaborate with Engineering regarding equipment maintenance and preventative maintenance schedules.
- Support departmental projects and continuous improvement initiatives.
- Participate in departmental meetings and operational planning sessions.
- Foster strong working relationships across all resort departments.
