- Personally and through delegated duties, prepare all menu items for banquets.
- Specify and order all food for banquet functions.
- Responsible for ensuring the quality and quantity of food products used in banquets.
- Ensure that all sanitation standards are consistently practiced by all members of the banquet prep staff.
- Ensure that all preventative and repair maintenance on all banquet equipment is completed.
- Maintain food and labor costs at an acceptable level.
- Responsible for personnel-related matters including but not limited to interviewing, hiring, training, scheduling, coaching, evaluating, promoting, counseling, and discharging.
