Your Role in the Story
As the Restaurant Manager at Mimi Kakushi of LUURA, you will oversee all aspects of the restaurant鈥檚 operations, ensuring that every service, experience, and interaction reflects the avant-garde, Japanese-inspired concept of the outlet while upholding the high standards of RIKAS. You are responsible for delivering a seamless, elevated guest journey鈥攆rom greeting to farewell鈥攃ombining creativity, precision, and operational excellence.
You will lead with a hands-on, visible presence on the floor, setting benchmarks for service, professionalism, and guest engagement. Your expertise will ensure smooth front-of-house and back-of-house coordination, drive team performance, support staff development, and deliver commercial results. You will safeguard the restaurant鈥檚 unique identity while embedding brand's values, operational standards, and culture throughout the team.
Key Responsibilities
- Oversee all daily operations at Mimi Kakushi, ensuring smooth service flow, operational efficiency, and memorable guest experiences.
- Uphold and communicate the restaurant鈥檚 Japanese-inspired, avant-garde philosophy, ensuring the concept remains consistent in every aspect of service and presentation.
- Lead, inspire, and manage all restaurant staff, including hiring, onboarding, scheduling, training, performance evaluations, and continuous development.
- Develop and maintain SOPs, operational manuals, and training materials tailored to Mimi Kakushi鈥檚 unique service style and culinary concept.
- Conduct pre-shift line-ups, ongoing coaching, and training sessions to ensure staff deliver consistently high standards.
- Be present on the floor throughout service, actively coaching, monitoring guest interactions, and personally assisting with VIP or special requests.
- Handle guest feedback and complaints promptly and professionally, ensuring resolution and maintaining the brand鈥檚 reputation.
- Collaborate closely with the F&B Manager, Chef, and other departments to ensure seamless coordination between kitchen, service, and support functions.
- Manage inventory, stock, and ordering processes for the restaurant, ensuring operational readiness and availability of specialty ingredients, sake, and beverages.
- Monitor and control budgets, P&L, and operational costs while maintaining service quality and guest satisfaction.
- Oversee the ambiance, presentation, music, lighting, and decor, ensuring it aligns with Mimi Kakushi鈥檚 avant-garde Japanese aesthetic.
- Support the kitchen team during service when necessary to ensure smooth coordination and service flow.
- Plan and execute special events, seasonal menus, and unique guest experiences that reinforce the restaurant鈥檚 brand identity.
- Analyze guest feedback, operational data, and market trends to drive continuous improvement, innovation, and elevated dining experiences.
- Utilize HR and operational systems for staff scheduling, performance tracking, payroll, and compliance reporting.
- Foster a motivated, professional, and culturally aligned team, ensuring high staff engagement, retention, and talent development.
- Lead by example, demonstrating professionalism, precision, and dedication to Mimi Kakushi鈥檚 unique service culture.
- Adapt standards and ways of working as per Rikas direction and standards.
