Personally and through delegated duties, prepare all menu items for
banquets.
Specify and order all food for banquet functions.
Responsible for ensuring the quality and quantity of food products used in
banquets.
Ensure that all sanitation standards are consistently practiced by all
members of the banquet prep staff.
Ensure that all preventative and repair maintenance on all banquet
equipment is completed.
Maintain food and labor costs at an acceptable level.
Responsible for personnel-related matters including but not limited to
interviewing, hiring, training, scheduling, coaching, evaluating, promoting,
counseling, and discharging.
